Boneless Pork Loin Roast (Pork Sirloin)
Just a delightful roasting joint, very tender and easy to carve, this also has the rind on for crisp crackling.
Always ensure that the rind is very dry before cooking (use kitchen towels to dry off) pre heat oven to maximum and cook for the first fifteen minutes at this temperature then reduce to 180 degrees to finish off. when cooked remove rind and set aside wrap pork in foil and rest for 20-30 mins before carving.
