Noisette of Lamb
Noisette of lamb is the most tender part of the the lamb, it’s boneless loin of lamb so just the eye of the chop, sometimes referred to as a lamb cannon
These can be cooked as a small roast or sliced into individual noisettes and quickly pan fried try deglazing the pan with a touch of red wine and serving them with a red current and rosemary glaze.
